Lyonnaise Potatoes

I have not made these since my days in Culinary school. They are very tasty and this is a good recipe so, ENJOY

These potatoes are really tender and soft with a lot of flavor. Pair them with any number of roast or grilled meats. They do take a bit of time to prepare due to the caramelized onions.

Lyonnaise Potatoes

  • 2 lbs potatoes peeled and sliced 1/4″ thick
  • 1 tbsp minced garlic
  • 2 large red onions halved and sliced paper thin
  • 8 tbsp butter
  • Salt/pepper

Parboil potatoes in salted water for two minutes then drain and set aside. Melt two tablespoons of butter over low heat in a 12″ oven-safe frying pan. Caramelize onions, which should take at least 20 minutes you want to get them nice and tender. Remove onions from pan and add remaining butter. Melt over medium heat and add garlic.
