There are so many different ways to make potato salad and I have to say I have tried most of them. I really love German potato salad and I do love American potato salad with that thick yellow dressing, but as I have grown my taste have matured.
This recipe is a good mix of the both and has enough bacon in it to make any American or Dane’s mouth water.
Tarragon Bacon Potato salad
6 to 8 Potatoes peeled and quartered
1 tsp lemon juice ( Or apple cider vinegar)
1 tbsp tarragon
1 pack bacon
1 small onion diced
1 clove Garlic fine diced
2 tbsp mustard
1/4 to 1/2 cup Mayonnaise ( depending on how moist you like it)
pinch of sea salt
fresh ground pepper to taste
First you need to bring the potatoes to a boil and cook them until they are just finished. Add lemon juice, and the tarragon, stir and allow to cool ( This step helps to infuse the potatoes with tarragon flavor).
Cook the bacon crispy chop and set aside. Next you need to saute the onion and the garlic until they are caramelized. Add the bacon, garlic, onions, mayo, mustard and finish it with salt and pepper to taste. Mix well.
I prefer my potato salad cold but you can have it warm as well. If you are not a fan of Tarragon you can use Oregano or some other herb it is up to you and your tastes, Be creative and Enjoy
