In 1995 Elderberry Juice was used to combat a flu epidemic in Panama. This amazing concoction has been used for medicinal purposes all over the world for centuries and even today scientist are rediscovering new medical uses for Elderberry juice.
Containing vitamins A, B, C, and a whole bunch of other great things for your body Elderberry juice is now used to treat heart problems, known to improve eye site, it is even used in the treatment of HIV in some countries. I could go on and on about the benefits of this drink but lets face it if it does not taste good you dont want to drink it.
This time of year we have tons of Elderberries growing here in Denmark (hyldebær). You can find them growing in every park and along most roadside and lets face it who does not like freebies. On with the recipe:
1700 Grams Berries no branches and only the black berries
1 ½ liters of Water
1 large organic apple (If not organic you will have to peel it)
1 lime cut into wedges
1 large cinnamon stick
600 grams Sugar
The first step is the hardest step and that is to separate all the no ripened berries from the ripe ones this is very important step in the process because the non-ripened berries are inedible and must be discarded. When completed Rinse the berries thoroughly.
Add the sugar first to the stock pot then add the water berries apple lime and cinnamon stick. Bring to a boil uncovered and allow simmer lightly for about an hour. This drink is great served warm, especially if you feel a cold or flu coming on. Not only will it sooth your throat but it will also give a quick boost to your immune system. Good Health and Enjoy.
